My concern is that you seem to miss the condition "stackable" as other members and structural rigidness using plywood when you "fold" the structure since you want to stack one more unit on top of another unit for people to sleep in.
I'm interested in how you would make the folding possible using plywood. Please provide detail drawing for the structure and physical model to test what's possible and what's not.
You can then go on with considering the effective folding patterns.
